Clam and Parrotfish for a Weekend Meal at Home

Clam is a common name for several kinds of bivalve mollusks. This one is called kappo (Ilk). Clams are a very nutritious whole food. They are a lean source of protein, rich in minerals, vitamins, and Omega- 3 fatty acids; they promote sexual health; and have been  found to possess cancer-preventing properties.

 
Parrotfishes papakol (Ilk) are regarded as a family, or a subfamily of the wrasses. They are found in coral reefs, rocky coasts, and seagrass beds, hence they impart a sort of coralline or calcareous taste. The whole fresh fish is directly grilled until the thick skin is burned and pealed off to reduce this unusual taste. It is best served with fresh tomato and a dash of salt, better still with red pepper (siling labuyo).  Serve on banana leaves while grill-hot sans china wares.  Relish with bare hands (kamayan).  ~
